Mayonnaise Cake!!

While trying to figure out what to post to my blog today I was thinking about when I was young and we would go to the neighbors house and we would all bake. The main thing I remember baking with Edith was Mayonnaise Cake.

If you've never eaten Mayonnaise Cake I'm sure you're saying YUK! It is definately one of those things where the expression 'don't knock it until you try it' comes in.

About the neighbors: Wayne and Edith Cameron lived about a quarter of a mile down the road from our house. They were brother and sister and I think the only children left from a big family. They lived on a corner in this huge farm house. I remember the bushes in the front of the house. They surrounded the front porch. They were bleeding hearts, if I remember correctly. I remember the huge barn on the family farm. They were elderly and we all really enjoyed going to their house and baking with Edith.

EDITH'S MAYONNAISE CAKE
4 tbsp Cocoa rounded, not heaping
1 cup Sugar
1 cup Water
1 cup Miracle Whip
2 cups of Flour
1/2 Tsp Salt
1 tsp Vanilla Extract
2 tsp Baking Soda
Mix the dry ingredients in a bowl and then mix the wet ingredients into the dry. Grease and flour a 9x13 pan and bake at 350 degrees for 30-35 minutes.
Optional: Sprinkle the cake with powdered sugar after it cools.
Personal Note* I do not like Miracle Whip at all. But, I love this cake. Try it and let me know what you thought of it. It is the most moist, delicious cake you'll probably ever eat.
